Nurturing leek & potato soup

Can’t beat a rustic soulful tasty nurturing soup on these cold winter days …

Leek, parsnip, potato & garlic soup

Ingredients listed in italics …

 1.     Wash, peel, cube or slice potato (3) & parsnip (1) preferably organic !!

2.     Saute leek with two cloves of garlic & half an onion in enough olive oil to cover the base of a large sauce pan.

3.     Add potato, parsnip and a sprinkling of black pepper, cumin & cinnamon. Stir in the love !!!

4.     When the vegetables are browning & coated with the spice, add a splash of white wine & allow to burn off.

5. Add enough vegetable or chicken stock to cover the potato & simmer until vegies are soft.

5.     Take off the heat, blend with a stick blender & add a dash of cream or sour cream to taste.

I garnished with avo, crushed walnuts & a splash of truffle oil … try basil, parsley, roasted pine nuts, toasted almonds or crunchy kale!

6. Serve with crusty sourdough … Yum 😋

Now that’s soul food!
