Super green food – basil pesto

pesto1Blend or barmix 1 bunch of basil leaves with;

– a clove of garlic,

– juice of a lemon quarter,

– toasted pine nuts,

– shaved or grated parmesan cheese,

– a cup of olive oil, and

pinch of salt & pepper to taste

… super cleansing & so good for you!

Store your pesto in a jar in the fridge for up to a week. Serve it with pasta, hot potato salad, on fish, with toasted roast vegie paninni or on pizza.

Variations: try macadamia nuts, add parsley or coriander, rocket, chilli or fetta.
