Divine food – prawn rice paper rolls!

– Prawn Rice Paper Rolls –

Peel prawns (3-4 per roll) & squeeze with lemon.

Prepare fillings: finely grate carrot, slice cabbage or lettuce, crush honey peanuts, slice mint & chop cucumber into sticks.

Soak a single rice paper sheet in luke warm water.

Place rice paper on a plate of same size.

Top one end of the rice paper sheet with bean sprouts, prawns, cucumber, lettuce, crushed peanuts, mint, carrot & sweet chilli sauce.

Fold the bottom ¼ sheet over your filling, then fold both sides in & roll.

Allow to sit in the fridge for 5mins.  Serve with Kecap Manis or similar to taste.
