Prawn Linguine – a Leo offering

One last Leo offering before the sun shifts into Virgo … 

Seafood is a Leo’s preferred menu selection & big cats love cream!

Prawn Linguine

1. Pre-heat oven to 200°c

2. Roast cherry tomatoes cut in half with salt, olive oil & if desired

a drop of balsamic – approx 30mins

3. Bring large pot of water to boil, add touch of salt & cook linguine to al-dente

4. Finely chop garlic, chilli & sauté in olive oil.

5. Saute peeled green prawns, preferably tails on. Burn off a little white wine,

add a little cream & simmer.

6. Add cooked linguine & roasted cherry tomatoes.

7. Roughly chop parsley.

8. Serve prawn sauce on bed of linguine topped with parsley, scrape of parmesan & a squeeze of lemon… Yum!

 

Options: substitute brown pasta, add spinach, pancetta, lemon zest or lime
