Spinach Quiche – Green Goodness …

My sister gave me the recipe for this long standing favourite & I, in turn have passed it on & on with variations & options. Of course for real foodies you make your own pastry, but this is my quick & easy ‘soul food’ version …

  1. Preheat oven with ceramic quiche or pie dish
  2. Saute 1 onion
  3. Cut & steam the leaves of 1 large bunch spinach or silverbeet, squeeze over little lemon juice
  4. In a mixing bowl, combine 2 eggs, 1 tin evaporated milk, onions, spinach, salt & pepper to taste
  5. Remove dish from oven, grease well with butter or oil & line with puff pastry (or your own)
  6. Pour contents from mixing bowl into pastry lined dish & finish with small amount of grated cheese and/or thin slices of tomato
  7. Bake at 180-200° for 40mins or until pastry is crisp & lightly golden 
  8. Rest & serve with rocket or green balsamic salad

(nb: my stove is a dinosaur so adapt the temp & time for you)

Filling variations – try:  adding pancetta, olive & fetta; corn & bacon; chicken & asparagus; smoked salmon, leek & dill. Combinations are endless. Or, replace the skinny tinny with combo’s of milk/cream/yoghurt or tahini … play with it!
