Moroccan Tea – Just a mint!

How fresh is this … ?

Boil water & warm a large teapot with a swish, then empty

  1. Place a small ‘handful size’ bunch of mint(without stalks) & 2 teaspoons of brown sugar in a large teapot
  2. Pour over just boiled water
  3. Infuse for 3- 5 minutes
  4. Pour a cup or two & tip the contents back into the pot
  5. Allow to sit, remove mint & serve

In Moroccan society the tea is poured from a height to aerate & oxygenate. Perfect as a digestive after meals or to soothe an overused mind! Moroccan mint tea is served by the men in Arab communities & is considered a gesture of hospitality.

For a fancy ‘peppo’, add a few roasted pine nuts to each glass, a wedge of citrus or thin slice of ginger.
